A Bird in the Shrub

4 Cups Ripe Peaches
Leaves From 10 Fresh Mint Sprigs
4 Cups Granulated Sugar
1 Tbsp Kosher Salt
4 Cups White Vinegar

2 Parts Wild Turkey® Bourbon
3/4 Part Peach Mint Shrub
11/2 Parts Grapefruit Juice
1/4 Part Simple Syrup
4-5 Parts Soda Water (To Taste)

To make shrub: combine the peaches and mint in a large bowl, add salt and sugar. Let sit at room temperature for three hours, stirring occasionally. Refrigerate for about 8 hours. After a syrup has formed, add the vinegar and stir to dissolve any remaining sugar. Let sit for 24 hours. Filter the mix through a double layer of cheese cloth. Pour into bottles or jars and seal tightly. Makes 48 oz. To make cocktail: add all ingredients to a glass with ice and stir to combine.
